Breakfast You Can Make In 15

Hey guys! I hope everyone is enjoyed their weekend. On the weekends, I like to try and figure out some yummy but simple breakfast ideas because I am a very bad breakfast eater and will skip over it if I don't plan ahead. So I found some super easy breakfast recipes on Pinterest that you can make during the week as well!

Egg and Vegetable Sandwich

  • 1 Thomas’ Everything Bagel Thin

  • ¾ cup egg whites

  • 10-15 fresh spinach leaves

  • 1 wedge Laughing Cow Herb & Garlic Cheese

  • 2 slices tomato

  • 2-4 slices avocado

  • kosher salt

  • Cholula hot sauce


  1. Toast bagel thin in the toaster or toaster oven. In a small bowl add egg whites and spinach leaves, season with kosher salt. Place in microwave for 1 minute 30 seconds, keeping an eye on the eggs so they don’t overflow.

  2. Smear wedge of cheese on toasted bagel thin and add slices of tomato. Spoon egg out of bowl in a single patty and place on top of cheese and tomato, top with avocado. Season with more salt and hot sauce if desired.

Quinoa Porridge

  • 1 cup of quinoa

  • 1/2 cup almond milk/dairy milk

  • 1/2 tsp vanilla extract

  • 1 tsp honey

  • 1 cup strawberries, quartered

  • 1 cup raspberries

  • 1 cup blueberries

  • 1 handful of pomegranate seeds

  • 2 tbsp almond butter/peanut butter

  • 1/2 cup sliced almonds, toasted

  • A few mint leaves

  • 1/2 lime/lemon


1. Bring a pot of water to the boil, and add the quinoa. Cook it until it’s just underdone, just a few minutes less than it says on the packet. Drain it and put it back in the pot over a low heat. Then add the almond milk, almond/peanut butter and vanilla, and keep stirring for a couple of minutes.

2. Remove from the heat and add the berries, seeds and nuts. Give it a taste. If you’d like to add more honey, almond milk, etc. it’s up to your preference. To serve, give a little squeeze of lime/lemon to sharpen it up, and place in a bowl topped with a few mint leaves

Breakfast Taquitos

  • 10-12 corn tortillas, softened

  • 3 large eggs, scrambled

  • 6 ounces spicy Italian sausage, crumbled

  • 1/4 cup julienned sun dried tomatoes, drained

  • 1 avocado, halved, seeded, peeled and diced

  • 1 cup shredded sharp cheddar cheese


  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper; set aside.

  2. Working one at a time, transfer tortilla to a work surface; place eggs, sausage, sun dried tomatoes, avocado and cheddar cheese in the center of each wrapper. Bring the bottom edge of the tortilla tightly over the filling, rolling from bottom to top until the top of the tortilla is reached. Repeat with remaining tortilla and filling.

  3. Place taquitos seam side down onto prepared baking sheet and bake until taquitos are crisp and cheese has melted, about 12-15 minutes.

  4. Serve immediately.

Amish Baked Oatmeal

  • 2 large eggs

  • 1/2 cup packed light-brown sugar

  • 1 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • 1 1/4 cups milk

  • 1/4 cup butter , melted (I used salted)

  • 3 cups rolled oats (quick oats works fine too)


  1. Preheat oven to 350 degrees. Butter an 8 by 8-inch baking dish, set aside.

  2. In a large mixing bowl whisk together eggs. Add in brown sugar, baking powder, cinnamon, vanilla and salt and whisk until no lumps remain. Stir in milk and melted butter then mix in oats. Pour into prepared baking dish and spread evenly (at this point you can refrigerate overnight if desired or bake immediately). Bake in preheated oven 30 - 40 minutes until set.

  3. Cut into squares and serve warm with fresh fruit, nuts, milk, a little cream or half and half, maple syrup or honey if desired.

Apple Cookies

  • 1 apple

  • ¼ cup peanut butter

  • ¼ cup almonds, sliced

  • ¼ cup walnuts, chopped

  • ¼ cup shredded coconut

  • ¼ cup chocolate chips


  1. Slice apple into thing rings and remove core.

  2. Spread peanut butter over one side of ring. Top with almonds, walnuts, coconut, and chocolate chips.
